Summer Dessert - Raspberry Shrikhand

Shrikhand is a classic Indian dessert made with 4 simple ingredients - hung curd, cardamom, saffron and powdered sugar. Yes, that’s all there is to it! 🤷‍♀️ No heating, no baking, no cooking. Just mixing these ingredients together! There exists a dessert which is actually THAT simple to make! 🤩

This classic dish has some welcome variations- like the Kesar Elaichi Shrikhand and Mango Shrikhand.

Today, I’m excited to share with you, my own spin on this traditional Maharashtrian Sweet. From my Kitchen Today - Raspberry Shrikhand!




Course: Dessert

Ingredients

Fresh raspberries - 1 cup

Thick yogurt - 2 cups

Slivered Almonds - 1 Tbsp

Powdered sugar - 4 Tbsp


Method

  1. Using a cheesecloth or muslin cloth, strain the yogurt to separate fat from whey (Hung Curds) and set aside

  2. In a mixing bowl, mash raspberries using a fork or a spoon (do not use a blender- it’ll make it watery) until it becomes a pulp

  3. Add the strained thick yogurt to a bowl along with powdered sugar. Whip it using a fork until the sugar mixes well with the yogurt

  4. Add the raspberry pulp and mix well

  5. In a serving bowl, layer the base with slivered almonds. Add roughly chopped raspberries on top of it. Pour the Raspberry Shrikhand on top of the chopped raspberries. Top again with slivered almonds or nuts of your choice

  6. Refrigerate for 2 hours before serving

  7. Enjoy a super yummy summer dessert ️
