Desi Spinach Paneer Wraps

Back to my #kitchen after a short break!

Of course I’ve made some #newyear #resolutions and surprise surprise, one of it is eating healthy!! 😅

In my effort to make something wholesome while not compromising on the taste, here’s me sharing my first #healthy meal this new year - Spinach and Paneer Wrap!







Ever since I saw this method of folding a #wrap on my #Instagram feed, I’ve been meaning to try it! I hope you do too!

Ingredients:

For the Spinach Chapatti:

Wheat flour - 1.5 cups

Blanched spinach - 1 cup

Water - as needed

Green chili - 2

Oil - 1 tsp

Salt - to taste


For the Paneer Stuffing:

Paneer - 1/2 cup (small cubes)

Onion - 1/4 cup (finely chopped)

Tomato - 1/4 cup (finely chopped)

Ginger - 1 Tbsp (finely chopped)

Green chili - 1 (finely chopped)

Coriander leaves - 1/4 cup

Salt - to taste

Red chili powder - 1/2 tsp

Cumin powder - 1/2 tsp

Coriander powder - 1/2 tsp

Mustard seeds - 1/2 tsp

Cumin seeds - 1/2 tsp

Oil - 2 tsp


Other toppings (per your taste)

Goats Cheese

Chili flakes

Grated paneer

Spinach leaves



Method:

To make the spinach chapatti/tortilla:

  1. Blend the blanched spinach, green chili, oil and salt in a mixer

  2. Add this to the wheat flour and kneed using additional water as needed to form a soft, non sticky dough (like chapatti dough)

  3. Roll out chapattis and heat them on a hot tawa for about 30 seconds on each side


To make the Panner filling:

  1. In a Pan, heat oil and add to it mustard and cumin seeds

  2. Once they splutter, add finely chopped ginger and green chili and sauté

  3. Add onions and sauté until they turn translucent

  4. Add the tomatoes and panner along with cumin powder, coriander powder, red chili powder and salt and let the paneer coat well in the spices

  5. Once the juiciness from the tomatoes dries up, switch off the flame and stir in finely chopped coriander leaves

  6. The paneer stuffing is now ready



To assemble the wrap:

  1. Cut along the radius of the chapatti (refer video)

  2. Place the paneer stuffing, cheese, spinach, chili flakes and grated panner on 4 quadrants of the chapatti and roll it anti clockwise 4 times (refer video)

  3. Cook the wrap in a grill, sandwich maker or on a tawa until the cheese melts and the the wraps is well cooked

  4. Serve wrap with any sweet/ spicy chutney or with some yogurt and pickles
