Apple, Celery and Carrot soup 🍲

Cold weather warrants some soulful and heartening food and soups are definitely one of my favorites!

Not only do they leave you feeling full, but are also perhaps the nicest way to take in your dose of boring veggies and some fruits too! 😄

Oh, and did I tell you they are super easy to make too?

From my Kitchen Today, Carrot, Celery and Apple soup! 🍲




Serves - 2

Cup measure - 250ml


Ingredients:

Carrot - 3 large

Granny Smith - 1 (cored)

Celery stalk - 1 cup (roughly chopped)

Pepper - 2 tsp

Salt - as needed

Water or vegetable stalk - 4 cups


Topping:

Toasted Pumpkin seeds or sunflower nuts

Walnuts or slivered almonds


Method:

  1. Peel and chop the carrots roughly

  2. Core the Apple and chop roughly

  3. To a pressure pan or iPot, add carrots, apple and celery along with 2 tsp pepper and salt as required.

  4. Pour water or for enriched taste, vegetable stalk over this and pressure cook

  5. Once cooled, blend to form a smooth purée

  6. Strain the soup or consume with the fiber per your preference

  7. Top with seeds or nuts to provide added texture to the soup

  8. Serve hot with toasted bread
