Bitter Gourd Side

Part of my new year resolution was to try new version of veggies I hated! #Bittergourd definitely was on my to-try list!

So today, I tried making a curry/side/pickle/Indian stir-fry, call it what you may, with Bitter Gourd 🥒

It was of course a bit bitter, but super flavorful and definitely something I’m going to make more often! This recipe will be amazing with #Chapathi, #Rice or like I had today, some #quinoa!


So guys, do experiment with vegetables you never tried/liked and I’m sure you’ll fall in love with at least some new version of it! 💚

Ingredients:

Bitter Gourd (medium) - 3

Onion - 1 cup (thinly sliced)

Oil - 1 Tbsp

Mustard seeds - 1 tsp

Cumin seeds - 1 tsp

Asafetida- 1/4 tsp

Red chili powder - 2 tsp

Coriander powder - 1/2 tsp

Cumin powder - 1/2 tsp

Turmeric powder - 1/2 tsp

Salt - to taste

Sugar - 2 tsp (adjust based on the bitterness of the bitter gourd)

Curry leaves - 10 to 12

Coriander leaves - 1/4 cup (finely chopped)

Water - as required

Lemon juice - 1 Tbsp


Method:

  1. Wash, peel and cut the Bitter Gourd into thin discs. Remove the seeds if the vegetable is very ripe

  2. In a saucepan, heat oil and temper- mustard seeds, cumin, curry leaves and asafetida

  3. Add sliced onions and sauté until translucent

  4. Add salt, sugar, red chili, coriander, cumin and turmeric powders and coat the the onion in the spices

  5. Add the Bitter Gourd and stir until it’s well coated

  6. Add water as required, close the lid and cook for 8-10 mins on medium flame. The vegetable becomes tender and absorbs the flavors added earlier

  7. Remove from heat and add fresh coriander leaves and some lemon juice

  8. Serve with rice, quinoa or chapathi
