Spinach Gnocchi in Alfredo Sauce

I know we all have been having our own fair share of odd cravings! Some stuff, we can make and some others? Well, I tried making them too!

Food > Struggle any day! 👩‍🍳

Anyway, I was craving Gnocchi coz when I was scrolling through some holiday pictures, there was a very memorable meal (of course I took a picture) of some creamy Gnocchi! 🥟

One of pasta’s lesser known varieties, Gnocchi, is usually made with potato or flour and is super soft and creamy.

I love spinach in everything I eat! And so, I attempted making some spinach gnocchi tied together with an Alfredo sauce!


From my Kitchen Today, “Spinach Gnocchi in Alfredo Sauce”❕



The technique for making the gnocchi was inspired by @tastyvegetarian @buzzfeedtasty Gnocchi 4 ways recipe.

Ingredients:

For the gnocchi: Baby spinach : 2 cups

Water : 1/2 cup

Wheat flour : 1.5 cups

Salt : to taste

White pepper : 1/4 tsp

Flavorless oil : 1 tsp


For the Alfredo sauce:

Butter : 2 tbsp

All purpose flour : 1/2 tbsp

Milk : 2 cups

Cheese : 1/4 cup (grated)

Salt : to taste

Chili flakes : 1 tbsp


For capsicum topping:

Capsicum : 2 (cut into ⭕️ discs horizontally)

Salt : to taste

Oil : 2 tsp


To serve:

Toasted Walnuts - 1/4 cup (chopped)


Method:

  1. Cut capsicum into discs and rub it with some oil and salt. Bake the capsicum discs in a pre-heated oven for 20-25 mins at 350 F

  2. For the spinach gnocchi: Wash well and roughly chop spinach. Add to a blender jar along with salt, pepper, water and oil. Blend it to a very smooth purée

  3. In a deep bowl, mix the puréed spinach with wheat flour until well combined. Do not knead it.

  4. In a clean, flour-dusted surface, put the gnocchi dough and cut it into four (check illustrations)

  5. Roll out each of the four dough quarters and cut them with a knife into small pieces (gnocchi sized)

  6. Using the tines of a fork, carefully make impressions on the gnocchi (per the illustration)

  7. In a deep dish, bring water to a boil. Gently drop the gnocchi into the water. They sink in the beginning and after 30 secs or so, the begin to float.

  8. Once the gnocchi float, carefully take them out of the water, drain and set aside

  9. For the Alfredo (white sauce): In a saucepan, melt butter. Add all purpose flour to it and keep stirring it so it doesn’t burn

  10. After it turns aromatic, add milk and salt to the saucepan

  11. Keep mixing it until the mixture tightens to a saucy consistency

  12. Add grated cheese and chili flakes to the sauce and mix well

  13. To the Alfredo, add the gnocchi and cook until the gnocchi softens and the whole dish comes together

  14. To assemble: Mix the grilled capsicum, walnuts and serve the gnocchi hot
