My Mango Pancakes - Berried Alive! 🥞

Bringing color to a plate is a super fun task and it’s more interesting when you’re adding fruits and vegetables to achieve this! Pancakes and waffles have become my new go-to breakfast option now (Dosas FTW always, but I ran out of batter😥 ) I’ve tried making pink, white, green and brown colored batters in the past! Ingredients: Flour of your choice (Wheat/Maida)- 1.5 cup Baking powder - 1/2 tbsp Baking soda - 1/4 tsp Salt - a pinch Melted butter - 1 Tbsp Thick Yogurt- 1/2 cup Juicy mango - 1 Water - 1/4 cup Sugar - 1 Tbsp For the topping (Suggestion only): Banana spread: Ripe banana + Cinnamon powder Berries - Strawberries + Blueberries + Raspberries Maple Syrup/ honey/ - 1 Tbsp

Method:

  1. Peel and roughly chop the mango and add to a mixer jar along with yogurt and water. Blend to form a smooth mixture

  2. In a bowl, mix together all the dry ingredients- flour, sugar, salt, baking powder and baking soda

  3. Add melted butter, pureed mango mixture and whisk together to form a smooth and lump-free batter

  4. Preheat a skillet on medium flame and grease the surface

  5. Pour one large ladle of batter on hot surface and cook until both sides are done. Flip only when you see the surface turn bubbly

  6. For the banana spread: Mash ripe bananas along with some cinnamon and sugar (if desired) until it reaches a spreadable consistency

  7. Place one pancake and spread the banana mixture and repeat until you have 4 or so pancakes stacked

  8. Add desired toppings and serve
