Baba Ganoush Bites with Homemade Wheat Pita 🥙

Apart from the fact that it has a really cute name, what I love about this roasted eggplant appetizer is it’s simplicity to prepare and the amazing taste such few ingredients can create! This Lebanese side dish is usually served as a dip with pita bread, crackers or crudites. Today, I tried baking yeast-free pita and made a bite sized appetizer with it!

From my Kitchen Today, “Baba Ganoush Bites with Homemade Pita”





For the Baba Ganoush Ingredients:

Eggplant - 1 large

Sesame Seeds - 1/4 cup

Lemon juice - 2 Tbsp

Garlic - 2 cloves

Salt - to taste

Olive Oil - 2 Tbsp

Cumin powder - 1 tsp


To garnish: (serving suggestion only)

Parsley, colored capsicum (finely chopped), olive oil, green chili (fried)



Method:

  1. Preheat oven to 350° F

  2. Using the tines of a fork, pierce the skin of the eggplant and place it on a baking tray

  3. Bake the eggplant for 45-50 mins until it turns soft

  4. Remove the eggplant from the oven and allow it to cool. Once cool, carefully peel the skin

  5. Drain the excess water from the eggplant to avoid a runny dip

  6. In a pan, toast the sesame seeds for 3-4 mins, constantly tossing it

  7. Remove from heat and allow it to cool

  8. In a blender jar, add the peeled eggplant, toasted sesame seeds, olive oil, garlic, lemon juice, cumin powder, salt and blend to a smooth consistency


For the the homemade wheat pita: (yeast-free)


Ingredients:

Wheat Flour - 2 cups

Salt - 1/2 tsp

Sugar - 1 tsp

Baking powder - 1 tsp

Flavorless oil - 4 tbsp

Warm water - 1/3 rd cup (approximately)

Method:

  1. In a large mixing bowl, combine flour, sugar, salt, baking powder and oil

  2. Knead it well using warm water to form a very soft dough. Pour a tsp of oil over the kneaded dough, cover it and let it rest for about 3 hours

  3. After 3 hours, preheat the oven to 500°F

  4. Uncover the dough and knead it again

  5. Make 5-6 large dough balls and roll them out on a flat surface using a rolling pin

  6. Pleat the dough, make a pocket with it and roll again to a 1/4 inch thick disc

  7. Bake the pita for 5-6 mins




To assemble:


Break the pita bread into fours.

Spread some Baba Ganoush and top with parsley, fried green chili, finely chopped colored capsicum.

Wait no further, and just pop 'em into your mouth! :D
