Whenever I have some ripe bananas, they usually go into a smoothie or, if I yield to my temptations, turn into one of these these delicious vegan banana bread /muffins! đ
The recipe for both, the bread and muffins are exactly the same, but I just bake the bread for 40 mins while these mini treats bake only for 20-25 minutes!

Ingredients:
Very Ripe bananas - 3
Wheat flour - 2 cups
Vegetable Oil - 1/3 cup
Sweetened Vegan Chocolate chips - 1/3 cup
Demerara Sugar - 1/3 cup
Chopped walnuts - 1/3 cup
Baking powder -2 tsp
Baking soda -1/2 tsp
Cinnamon powder - 1 tsp
Vanilla essence -1 tsp
Method:
Preheat to 350 F
In a deep mixing bowl, mash the ripe bananas with a fork until they turn pulpy
Add cinnamon powder and vanilla extract to the banana pulp
Mix in the vegetable oil, followed by sugar and whisk well
Fold in the flour along with baking powder and baking soda
Give the batter a good mix and finally add in the chocolate chips and chopped walnuts
Scoop the batter into a muffin tray lined with cupcake liners until they are 2/3rds full
Bake in a preheated oven for 20-25 mins
Enjoy the muffins while they are warm! They however store well in room temperature for up to 3 days
