Eggless Banana Cake Recipe

(with suggested Vegan alternatives)

Ingredients:

• 3-4 medium to large ripe or over ripe bananas

• cups organic whole wheat flour

• 1 teaspoon baking powder

• 1⁄2 teaspoon baking soda

• A pinch of salt

• 1⁄2 cup regular sugar or 3/4 cup jaggery (or to taste)

• 2⁄3 cup butter (or any healthy organic cold pressed oil for vegans)

• 2 table spoons yogurt (Skip for vegans)

• 1 teaspoon vanilla extract

• Dry fruits, raisins, ground flax seeds, walnuts, almonds, etc (optional)





Preparation:

• Preheat your oven at 180 degrees c/350 degrees f.

• Peel and chop the bananas. Add them to a bowl and mash them with a fork.

• Add jaggery (sugar), butter (oil), yogurt, vanilla extract.

• Stir very well using hand mixer or fork

• Add wheat flour, baking soda, baking powder, salt directly in the bowl.

• Fold the dry ingredients into the wet ingredients very well.

• Add the chopped dry fruits and raisins, and fold again.

• Pour the batter in a greased pan

• Bake in the preheated oven at 180 degrees c/350 degrees f for 40 to 60 mins or till fork

or tooth pick inserted in the cake comes out clean.

• When warm or cooled, slice and serve banana cake. Garnish with honey or maple syrup

(vegans) and enjoy :)
