My rule of thumb for making an interesting salad is to have one of each: a sweet ingredient, a nut, a green leafy vegetable and a protein/fat! Trust me, this totally works every time, and gives you a wide range of delicious salads to pick and choose from based on what ingredients you like and what’s available!

Ingredients
Baby Spinach - 1 cup (packed)
Fresh Apricots - 1/2 cup (sliced/diced)
Mozzarella - 1/4 cup (cubed)
Toasted Walnuts - 1/4 cup
Lime juice - 1/2
Salt - to taste
Pepper - 1/2 tsp
Honey - 1 Tbsp
Chili flakes - 1 Tbsp

Method
In a large mixing bowl, combine spinach, apricots, walnuts and mozzarella
In a small cup, add the juice of half lemon, salt, pepper, dry chili flakes and honey and mix well until well combined
Pour the dressing over the salad mix and gently toss
Serve immediately
