My rule of thumb for making an interesting salad is to have one of each: a sweet ingredient, a nut, a green leafy vegetable and a protein/fat! Course: Appetizers/ Main Course Difficulty: 🟩⬜️⬜️⬜️⬜️ Servings: 2 Ingredients Baby Spinach - 1 cup (packed) Fresh Apricots - 1/2 cup (sliced/diced) Mozzarella - 1/4 cup (cubed) Toasted Walnuts - 1/4 cup Lime juice - 1/2 Salt - to taste Pepper - 1/2 tsp Honey - 1 Tbsp Chili flakes - 1 Tbsp

Method

  1. In a large mixing bowl, combine spinach, apricots, walnuts and mozzarella

  2. In a small cup, add the juice of half lemon, salt, pepper, dry chili flakes and honey and mix well until well combined

  3. Pour the dressing over the salad mix and gently toss

  4. Serve immediately
