Simple Meals : Baked Vegetables and Tofu

It’s getting super warm here now 🥵 And most days, I just don’t feel like standing by the hot stove and cooking elaborate meals! As an alternative, I just cut all the veggies and protein, and bake them!

Baking consumes lesser oil that stir frying and I love these baked meals coz of its simplicity to prepare and the delicious taste of caramelized vegetables. Course: Main Course Difficulty: 🟩⬜️⬜️⬜️⬜️ Servings: 2 Note: Vegan/ Vegetarian Ingredients: Firm Tofu - 200 grams Bell Pepper - 1 (julienned) Medium Onion - 1 (julienned) Beaten rice (Poha) - 1 cup Lemon - 1/2 Salt - to taste Olive oil - 1 Tbsp Schezwan sauce - 1/2 Tbsp

Method:

  1. Rinse the beaten rice well and set aside, wet

  2. In a baking tray, place cut tofu, onions, bell pepper, and half lemon (un-squeezed)

  3. Coat the tofu and vegetables in olive oil, Schezwan sauce and sprinkle some salt

  4. Bake in a pre-heated oven at 350F for 25-30 mins, flipping over all the vegetables and tofu midway once

  5. Once done, remove from the oven

  6. Toss the baked items along with the wet beaten rice and then tie together by squeezing the juice of the baked lemon

  7. Feel free to add/ substitute any vegetables of your choice and also the beaten rice with regular rice/quinoa
