Paneer Achari! 🌶

Some recipes are passed on from your Grand-mom to your Mom and then to you! But it truly becomes special when one of your recipes get the approval of the senior ladies of the house šŸ˜

I had one such lucky day! šŸ™†šŸ»ā€ā™€ļø

I looked up quite a few recipes on the internet and I wasn’t quite sure how I wanted to make this dish! So I made my own version inspired by about 6 versions from YouTube! šŸ˜…

I was raving about this experimental Paneer Achari Recipe to my mom and she was sooo skeptical coz of some un-conventional steps in it! I challenged her to follow my recipe to the T and she agreed to try!

In the words of my Mom, not only did my dad and brother love it, but my amazing cook of a Grand-Mom who happened to come home that evening also seemed to have loved it šŸ™†šŸ»ā€ā™€ļøšŸ˜

Dish: Achari Paneer

Course: Main course

Difficulty: šŸŸ©šŸŸ©šŸŸ©ā¬œļøā¬œļø

Servings: 2

Note: Vegetarian



Ingredients

Paneer - 1 cup (cubed)

Onion - 1 cup (very finely chopped)

Tomato - 2 medium sized (very finely chopped)

Oil - 1/2 cup

Ginger - 1/2 Tbsp (finely chopped)

Garlic - 1/4 Tbsp (finely chopped)

Cloves - 3

Cinnamon bark - 1 inch piece

Cardamom - 3

Fenugreek - 2 tsp

Coriander seeds - 3 tsp

Cumin seeds - 2 tsp

Mustard seeds - 2 tsp

Dried red chili - 4

Green chili - 4 (slit vertically)

Kashmiri Red Chili Powder - 2 tsp

Turmeric powder - 1/2 tsp

Salt - to taste

Curd - 1/3 cup

Fennel seeds - 2 tsp



Method:

  1. In a bowl of water, add the cubed panner and let it sit until required for preparation

  2. Heat a deep dish and add oil and pounded spices (cloves, cardamom and cinnamon).

  3. Add fenugreek seeds, dried red chilies, cumin seeds and coriander seeds

  4. Once these turn aromatic, add the finely chopped onion along with ginger and garlic

  5. Season the onions with salt, red chili powder and turmeric powder

  6. Once the onions begin to slightly brown, add the tomato

  7. Cover with a lid and cook this over medium heat for 10-12 mins until the oil begins to separate

  8. At this stage, add curd, mustard seeds, fennel seeds and slit green chilies

  9. Cover the base and cook for about 4-6 mins

  10. Finally, add the cubes of Panner (without water) to the base and cook over medium heat for 5-6 mins

  11. Enjoy the spicy Achari Paneer with some rice or any Indian bread (Chapathis, naan, Pooris) 🌶



Note: Never add water in this recipe. It will ruin the consistency. This is meant to be a semi-gravy curry šŸ›
