Another day, another sweet! š Well itās that time of the year! Not my fault! šš»āāļø
My mother was recollecting to me yesterday that my dear late paternal Grandmom always asked that on Saraswati Pooja we make āWhiteā colored offerings to the Goddess! So today, I make super white Coconut Rice, Curd Rice and for dessert, Paal Poli (Milk Poli)! š„
This milk based Indian sweet is basically maida Pooris soaked in flavored reduced milk! For Saraswati Pooja, remembering my dear Grandmom, From my Kitchen Today, Paal Poli āŖļø! š¤

Ingredients:
*All cup measures are 200ml
For the Pooris:
Maida - 1/2 cup
Sooji/ Bombay Rava - 1/3 cup
Salt - a pinch
Water - ~ 1/3 cup (to knead)
Oil - for deep frying
For the milk reduction:
Milk - 2.5 cups
Sugar - 6 tbsp
Saffron - 15-20 strands
Cardamom - 3 pods (broken)
Almonds - 5 Tbsp (slivered)
Method:
In a mixing bowl, combine the maida, Sooji and salt and kneed using water to form a smooth dough (like for a Chapathi). Set this aside
In a heavy bottomed pan, heat milk stirring continuously. Ensure the sides are scraped into the milk mixture at frequent intervals
From the boiling milk, remove 1/3 cup of milk and add saffron strands and powdered cardamom
Once the milk reduces to 2/3rds the original volume, remove from heat
In the meantime, heat oil for deep frying
Roll out the kneaded dough into small Pooris (~3ā in diameter) and deep fry them, flipping both sides
Put the hot Pooris into the prepared milk reduction and let it soak for at least an hour
Refrigerate the Pal Polis for the best version and garnish finally with chopped almonds
