Orange colored pasta sauce? Spaghetti in Sweet potato Sauce :)

A couple of sweet potatoes have been in vegetable draw for the longest time and I really had to finish them!

Baked sweet potatoes? Fries? A mash perhaps?

But no, I felt like eating spaghetti for lunch!

So, I had to make a dish to satisfy a need and a want! 😃


Paired with some stir fried broccoli, I tried making spaghetti in an orange colored sauce with sweet potatoes!


From my Kitchen Today, Sweet Potato Spaghetti with Stir fried Brocolli 🧡




Dish: Sweet Potato Spaghetti

Course: Main course

Difficulty: 🟩🟩🟩⬜️⬜️

Servings: 2

Note: Vegetarian



Ingredients:

Sweet potato (large) - 2

Broccoli florets - 1 cup

Spaghetti - 2 servings

Butter - 1 Tbsp + 1 Tbsp

Garlic pods - 3 (finely chopped)

Smoked paprika - 2 Tsp

Milk - 1 cup

All purpose flour - 1 Tbsp

Salt - to taste

Oregano - 2 tsp

Walnuts (broken) - 1/4 cup (optional)

Capers - 3 tsp (optional)


Method:

  1. Wash and dry sweet potatoes. Bake in an oven pre-heated to 350 F for 25 mins

  2. Once baked, remove sweet potatoes from the oven, allow them to cool and peel their skin

  3. Mash one of the two sweet potatoes well and set aside. Chop the other sweet potato into cubes

  4. In a deep pan, cook spaghetti with a pinch of salt and sufficient water. When done, drain water from it and set aside

  5. In another saucepan, heat 1 tbsp of butter and add finely chopped garlic. Then, mix 1 tbsp of flour to it. Sauté for about a minute

  6. Add 1 cup of milk to the saucepan and stir continuously to remove any lumps

  7. Add the mashed sweet potato into the milk and season with salt and smoked paprika

  8. Simmer the sauce until it comes together

  9. At this stage, add the spaghetti into the sauce and gently toss it so that the pasta and the sauce blend

  10. In another pan, heat 1 tbsp of butter. Add the diced sweet potato along with 1 cup of broccoli

  11. Season with salt and oregano and sauté until it begins to slightly caramelize

  12. Add the stir fried veggies to the spaghetti and gently mix

  13. Top with nuts and capers if desired and serve hot
