Whenever I’ve been on the phone with my mom, she never forgets to mention the mangoes that they’ve been eating at home! I’ve been sooo jealous and I wish I was at home for the mango season!
Anyway, we make the most of our situation right? So I shopped for mangoes here that go by names like “Fairchild” and “Tommy Atkins”! (Yes, I was very amused too! )
These taste nothing like the Banganapalli or Alphonso mangoes (my favorite ones) but nevertheless, mangoes are mangoes 🤩
I’m on a mission : I’m not eating any meal without including some form of mangoes this amazing season!
For breakfast, From my Kitchen Today, Mango waffles 🥭 🧇 with a lot of berries!

Note: This recipe requires a waffle iron. Alternatively, the same batter can also be used to make pancakes. Toppings are only a serving suggestion. #GetCreative

Ingredients:
Flour of your choice (Wheat/Maida)- 1.5 cup
Baking powder - 1/2 tbsp
Baking soda - 1/4 tsp
Salt - a pinch
Melted butter - 1 Tbsp
Thick Yogurt- 1/2 cup
Juicy mango - 1
Water - 1/4 cup
Sugar - 1 Tbsp

For the topping (Suggestion only):
Banana spread: Ripe banana + Cinnamon powder
Berries - Strawberries + Blueberries + Raspberries
Maple Syrup/ honey/ - 1 Tbsp
Method:
Peel and roughly chop the mango and add to a mixer jar along with yogurt and water. Blend to form a smooth mixture
In a bowl, mix together all the dry ingredients- flour, sugar, salt, baking powder and baking soda
Add melted butter, pureed mango mixture and whisk together to form a smooth and lump-free batter
Warm the waffle iron and grease well
Pour one large ladle of batter on to the hot waffle maker and cook until both sides are done
For the banana spread: Mash ripe bananas along with some cinnamon and sugar (if desired) until it reaches a spreadable consistency
Add desired toppings on the waffles and serve
