Navratri Special : Rava Kesari 🧔

Kesari is one of those sweets made at home whenever some sweet HAS to be made and whoever’s cooking is lazy to make anything elaborate! šŸ˜… Kesari made it’s appearance quite often on the menu back at home and I’ve never actually ā€œcravedā€ Kesari! šŸ’šŸ»ā€ā™€ļø


But during these crazy times, I don’t why, I’ve just been wanting to eat Kesari so bad šŸ¤·šŸ»ā€ā™€ļø And I only mentioned this to Shyam who very willingly, on a working day, volunteered to make it all by himself! šŸ‘ØšŸ½ā€šŸ³


For Navrathri Prasadam and satiating random cravings, from my Kitchen Today - Shyam’s Rava Kesari 🧔

Ingredients:


Sooji/ Rava - 1/2 cup

Sugar - 1/3 cup

Ghee - 2 Tbsp + 2 Tbsp

Cashew & Raisins - a handful (combined)

Water - 1 cup Saffron - 10-12 strands (soaked in 1/4 cup warm water) Orange food coloring - 1/4 tsp (optional)

Method:


  1. In a heavy bottomed pan, heat 2 Tbsp ghee on medium flame and to it, add cashews & raisins

  2. Toast the cashews & raisins until they turn golden. Then, strain them and set aside

  3. In the same Pan, add rava and roast it until it turns aromatic. Remove from heat and set aside

  4. Once again, in the same Pan, bring 1 cup of water to a boil

  5. To boiling water, add the roasted Rava and stir briskly so that no lumps are formed

  6. Once the Rava absorbs all the water, add 1/3 sugar and stir it until the sugar is completely dissolved

  7. Add the saffron strands soaked in water along with food coloring and stir until the color is well incorporated

  8. Add 2 Tbsp ghee at this stage as well as the ghee roasted cashews and raisins

  9. Mix the Rava Kesari well for about 2-3 minutes

  10. Once it doesn’t stick to the pan, the Kesari is ready to be served
