Microwave Dhokla

I simply love snacking! And somehow, the melange of sweet and salt in my food always has my heart! One such amazing snack is the Dhokla! I LOVE it but always thought I needed a steamer to make it (Yes, I don’t have a steamer! No, I never make Idli )! Ingredients: For the Dhokla: Gram flour - 1.5 cups Semolina - 3 Tbsp Sugar - 2 Tsp Salt - 1 Tsp Oil - 3 Tsp Ginger - 1 tsp (grated) Turmeric powder - 3/4 Tsp Asafetida - 1/4 tsp Eno - 3 tsp Water - 3/4 cup Lemon Juice - 1 Tbsp

For the tempered syrup: Oil - 4 tsp Mustard seeds - 2 tsp Cumin seeds - 1 tsp Finely chopped ginger - 1 tsp Finely chopped green chilies - 2 tsp Sesame seeds - 1/2 tsp Asafetida - 1/2 tsp Sugar - 3 tsp Salt - 1 tsp Water - 1.5 cups Lemon Juice - 1 tbsp Finely chopped coriander leaves - 1/2 cup Method: For the batter:

  1. In a mixing bowl, combine gram flour (preferably sifted to prevent lumps), semolina, salt, sugar, asafetida, turmeric powder, grated ginger, lemon juice, Eno, and oil, and mix well

  2. Add 3/4 cup water to the mixture to form a smooth and lump free batter

  3. Take a microwave safe dish and grease with oil

  4. Pour the prepared batter into the greased dish

  5. Microwave the Dhokla batter for 5 mins on high or until the sides begin to leave the dish.

  6. Note: some microwaves may take longer and the depth of your dish may also alter cooking time. Please ensure the batter is completely cooked (takes anywhere between 5-8 mins)

Meanwhile, For the tempering (check separate ingredients list)

  1. In a pan, heat oil and add to it, mustard, cumin, asafetida and sesame seeds. Once the mustard splutters, add finely chopped green chilies and ginger to it and give it a good mix

  2. Turn off the heat and add water, sugar, salt and lemon juice, and mix until the sugar and salt dissolve

  3. Remove the Dhokla from the microwave and check at the center to ensure it is fully cooked

  4. Slice the Dhokla into squares or desired shape

  5. Pour the prepared tempered syrup on the Dhokla and let it sit for about 10 mins

  6. Serve with a mint chutney or a sweet chutney, or if you are as impatient as I was, just pop them into your mouth as is!
