Challenge 9 : Indian Food 👩‍🍳

Sticking true to our origins, for our penultimate round of the #PantryStaplesChallenge, we decided to make Indian food today!

Indian food is so diverse and it would only be fair if we did one round for each of the states! Nonetheless, we tried to make whatever Indian Dish we love to eat with these simple staple ingredients :)


The sweet lover in me couldn’t get past desserts for my choice in this challenge and I made some spongy Rasgullas!

I never imagined that making Rasgulla was actually THIS simple and used so few ingredients!

From my Kitchen Today, for the last but one challenge, some juicy Rasgullas 🤍🤍🤍




Dish : Paneer Rasgulla

Course: Dessert / Sweet

Difficulty: 🟩🟩⬜️⬜️⬜️ Servings: 10 pieces

Ingredients:

Milk - 2 cups (500ml)

Lemon Juice - 1 full large lemon


For the sugar syrup:

Water - 2 cups

Sugar - 3/4 cup

Cardamon - 2 pods (optional)

Saffron - few strands (optional)


Method:

  1. In a heavy bottomed pan, bring the milk to a boil. Once it boils, add in the juice of one whole lemon

  2. The milk will begin to curdle and whey will separate from the fat

  3. Strain out the milk solids and discard the whey

  4. In a cheese cloth, collect the milk solids

  5. Wash the paneer (milk solids) with water to remove any lemon flavor from it

  6. Drain the water completely and let it sit for about 15 mins

  7. Empty the panner from the cloth into a mixing bowl and knead the panner until it’s smooth

  8. Roll into even sized balls or rolls and set aside

  9. In a deep saucepan, add sugar and water, and let it simmer until all the sugar dissolves. At this stage, add cardamom if desired

  10. Gently drop the rolled panner into the simmering sugar syrup and let it cook over low heat for about 20 mins

  11. The Rasgulla absorbs the sugar syrup and doubles in size

  12. Add saffron strands to garnish if desired and enjoy some yummy homemade panner Rasgullas
