Summer is here and temperatures are soaring! I can’t blame myself for wanting to eat something cold (read as: ICECREAM) after lunch everyday! But this time when I went to the store, very close to the freezer section, I found a treasure! I managed to lay my hands on the last set of popsicle moulds on the rack and I can’t tell you how excited I am! :D So guys, get ready to be spammed with some Popsicle inspo! Course: Dessert Difficulty: 🟩⬜️⬜️⬜️⬜️ Servings: 2 Note: If you don’t have a Popsicle mould, just pour the liquid into any tall drinking glass and stick in a spoon or fork #GetCreative Ingredients: Lemon Juice - 1 large lemon Strawberry - 2 (large) Sugar - 3 tbsp Salt - a pinch Ginger - 1 tsp (finely chopped) Mint leaves - 4 large Water - 1.5 cups

Method:

1. Wash strawberries, finely chop them, add sugar and set aside for about 15 mins - it becomes tender and sugar turns syrupy

2. In a blender jar, add all the ingredients including the syrup and strawberries and blend until very well combined

3. Pass the mixture through a sieve to have a clear popsicle or if you’d like it to have tiny pieces of mint and ginger, skip this step

4. Pour into mould and deep freeze for 4-6 hours

5. Enjoy your yummy summer Popsicle 🌸
