3 Cheese Savory Galette

Pink Lemon Tree ( https://pinklemontree.in/ )has the credit of introducing to me some very interesting dishes and ingredients through their blog and IG page! The Galette was one such dish.

Galette is a French word to denote a free-form dough crust that can be filled with either a sweet or a savory filling! A French, fancier, rustic pizza, if you will...

Never had I heard of it before and when I saw the post on Pink Lemon Tree’s page, I knew it was this that I had to make next!😍


It was super easy to prep, adaptable and despite the seemingly indulgent ingredients, very very easy on the palette! 🤩Simply loved it and can’t wait to share a sweet galette recipe soon! 😄

Dish: Three cheese Savory Galette

Servings: 2

Note: Toppings can be altered to suit your taste


Ingredients:

Wheat Flour - 1 cup

Butter - 1/4 cup cup (cubed)

Salt - 1/4 tsp

Parmesan Cheese - 1/4 cup

Vinegar - 1 Tbsp


Toppings:

Spinach - 1/4 cup (packed)

Tomatoes - 1 large de-seeded and cut as discs

Green capsicum (thinly sliced) - about 10 slices

Onions (thinly sliced) - about 10 slices

Chili flakes - 1 tsp (or to taste)

Oregano - 1 tsp

Salt - to taste

Pumpkin seeds - 1 Tbsp

Mozzarella - 1/4 cup (crumbled)*

Gouda - 2 tbsp cup (chopped up)*

*Any available cheese works coz the original recipe has Ricotta and Parmesan

Olive oil - 1 Tbsp

Method:

  1. To make the pastry crust, crumble the butter into the flour to form a wet sand like consistency. Do not knead

  2. Add butter and Parmesan to the dough and wrap in cling film. Refrigerate for 20-30mins

  3. For the filling, wash and roughly chop baby spinach leaves and combine it with thin slices of onion and capsicum.

  4. Add olive oil, chili flakes, salt and oregano

  5. Mix well and set aside (do not add tomatoes just yet)

  6. Preheat the oven to 350F

  7. Remove the pastry crust from the refrigerator and roll to a thick disc

  8. Fill the center of the pastry crust starting with a layer of mozzarella cheese, followed by a layer of tomato discs

  9. Top this with the spinach, onion and capsicum mix and add pumpkin seeds on top

  10. Fold the edges of the pastry inward to make it look like a classic galette

  11. Bake for 40-45 mins or until the pastry is golden

  12. Serve hot
