Poha for Breakfast, but with a twist - Try "Spinach Poha"

Flattened rice also known as Poha is a popular Indian rice variant. Also known as beaten rice, it is basically de-husked rice which is pounded into flat dry flakes. The rice is parboiled before flattening and can be consumed with little or no cooking. Its easy preparation makes it a popular meal option in India.
Poha is definitely one of my go-to breakfast recipes because it’s so quick and easy to make and is very tasty! Here's a healthy twist on it where I have added spinach in its preparation.

Ingredients:
Beaten rice (Aval / Poha) - 1 cup
Baby spinach - 1 cup (compressed)
Onion - 1/4 cup (finely chopped)
Oil - 3 tsp
Peanuts - 1/4 cup
Cumin - 1 tsp
Mustard seeds - 1 tsp
Green chili - 2 (finely chopped)
Ginger - 1 tsp (finely chopped)
Urad Dhal - 2 tsp
Turmeric powder - 1/2 tsp
Asafetida powder - 1/2 tsp
Salt - to taste
Method:
Wash the beaten rice well and set it aside wet, but not soaked in water.
In a pan, heat the oil. Add mustard seeds, Urad Dhal, cumin and asafetida powder.
Once the mustard seeds splutter, add green chili, ginger and chopped onion.
Add the turmeric powder and salt at this stage as per your taste.
Once the onions turn translucent, add the peanuts and stir until the peanuts are toasted.
Then, add the spinach after washing and roughly chopping it, and sauté until the spinach wilts.
Once the spinach wilts, add the beaten rice and gently mix the ingredients.
Turn off the stove as soon as you mix in the beaten rice. It may lose its moisture and become dry otherwise.
Serve the Spinach Poha with curd or with a pickle.
